SOME OATMEAL LOVE FOR YOU


Is anyone else diggin' the nip in air signaling the return of Autumn? I love it , I just love it! Going to bed at night with the windows open, getting just that little chill while you hunker down under a quilt spells pure happiness to me. The return of Autumn is a calming time to me. Spiced apple cider, pumpkins, gourd soup, and all those comfort foods that have taken a back seat to summer faire are now being cooked up again.  One dish I particularly love in the morning is oatmeal. This recipe is super easy and tasty as well as versatile. Add in some favs, change it up a bit to your liking, but do try it.

Blueberry Cottage Overnight Crock-pot Oatmeal

Ingredients:

2 baking apples, peeled and diced into 1" pieces
1/4 cup brown sugar
4 cups water
2 cups of rolled oats or steel cut is fine too ( I buy rolled oats in bulk) No instant!
2 tsp cinnamon
1 tsp salt
dash of stevia
3 TBS of pure maple syrup
Canola oil spray

The process:

In a bowl mix up your apples , sugar, stevia, cinnamon and salt. Coat the apples well and put into a crockpot that has been sprayed with a bit of oil.  Add the oats on top then the water. Add the maple syrup and turn the pot to low and cook for 8 hours. When done add in whatever you like, perhaps nuts, a bit more maple syrup, even a bit of creme or milk. *If adding dried fruit then add in when you mix up the apple mixture.

  2. I'll have to try this, it sounds so good. I've tried the overnight steel oats, but no one like them. But this sounds really good with a little brown sugar and apples with old fashioned oats - might do the trick for my family. Thank you for sharing your recipe. Have a great day! Heather
